Some Tea and Stollen?
Tue 8 Dec 2009, 07:43 0 Comment(s) Email article Report AbuseI baked my first batch of Stollen yesterday. I'm saying batch, because I usually bake 3 at a time and I have normally bake three batches. Most of these are Christmas gifts for dear friends, but we do eat a few ourselves. Some of my friends are so used to getting a Stollen for Christmas, that they don't plan any pudding for Christmas day!
Stollen is a traditional German Christmas fruit cake, much lighter than the English version. This one is made with cottage cheese, marzipan, mixed fruit, some orange peel and nuts. All German Christmas cakes and biscuits have lost of spices, and this one is no exception! It has a pinch of nutmeg, cinnamon, cloves, cardamom and ginger. When it comes out of the oven, it is coated with melted butter and sifted icing sugar.
It is moist and really delicious and can be kept in the freezer for weeks, although mine never lasts that long :)
Anyone coming for tea today?
